Fall finally did arrive and we don’t have to change just our clothes, we do also change our behaviour of eating. It’s also pumpkin time – again a vegetable I really really like. I love to eat warm soups during fall and winter, because they are light and they keep me warm. That’s why I want to show you how to make a delicious Styrian pumpkin soup. You can find the original recipe here, but I changed it here and there.




Kürbiscremesuppe_CollageIngredients for 4 persons:

  •  ½ Hokkaido pumpkin
  • 1 onion
  • 1 – 2 garlic
  • Butter
  • nutmeg
  • 150 ml whipped cream
  • pumpkin seed oil
  • pumpkin seeds

Preparation: Start with cutting the pumpkin into cubbes. Heat a pot and sweat cubbed onion in butter as well as garlic. Then add the pumkpin. Pour in the vegetable broth and season it with salt, pepper and nutmeg. Puree it all as soon as the pumpkin is soft. Add whipped cream and taste it. I just had to add some salt and some vinegar. You can use some pumpkin seed oil and some pumpkins seed to decorate. Just some easy steps to get a delicous Styrian pumpkin soup.
