Recipe: Strawberry Muffins

Today I’m showing you a new recipe and it’s not lowcarb, lowfat or vegan. This time it’s just tasty!

The reason why I’m showing you this easy muffin recipe is, that many of us (at least that are baking sometimes) has most of the ingredients at home. For me I just had to buy some strawberries. So it’s a perfect recipe if you need some sweets for a spontanous occasion.

250 g strawberries
150 g sugar
1 package of vanilla sugar
2 eggs
120 g butter
220 g spelt flour
some backing powder
some milk

Preperation: First you have to cut the strawberries into small pieces. Blend the butter, with the sugar, the eggs and the vanilla sugar together in a bowl for two minutes until foamy. Add the flour and backing powder together with some salt and add three TS of milk. Fold in the strawberries carefully. At the same time pre-heat the oven to 180 ºC and put the dough into the muffin cups. Put some of the strawberries on the top of the muffins and bake them for at least 25 minutes.
